Tonight I checked the specific gravity of the strawberry guava wine. It’s now down to 1.055. I added another 0.5 gram of Fermaid, squeezed out the strainer bag again, and put it back in the fermentation chamber.

Tonight I checked the chemistry of the strawberry guava melomel must.
Specific gravity: 1.093
pH: 3.34
Titratable Acidity: 0.55
All within range. I made up a yeast starter with about 250 ml of the must, plus the yeast, yeast nutrient (DAP), and the Fermaid, and left it covered in the kitchen until it was nice and foamy: about 2 [...]
